Contributions to entries on aspects of Spanish food culture - for example, Spanish cookery books - for the second edition of the Companion, edited by Tom Jaine with wit and verve. The commission was to interweave new research in the field while leaving intact the character of the original entry. A brief but fascinating task that set me to look again at received Spanish food history.
